Mini Almond Strawberry Tart
Ingredients
- All purpose flour
- Almond flour
- Butter
- Brown sugar
- Pure vanilla extra
- Fresh strawberries
- Sugar
- Corn starch
Tart Shell
- 1 1/4 cup all purpose flour
- 1 stick of cold butter cut in quarter inch cubes
- Ice Water
In a food processor add the flour and butter and pulse lightly until butter and flour combine. Then turn up the speed and add 1 tbsp of ice water in intervals as needed to bring dough together. The dough should be moist, but not overly wet with specks of butter distributed throughout. Cover the dough in cling wrap and place in refrigerator for 1 hour until ready to roll out.
Almond Filling
- 1 cup of ground almond flour (with or without skin)
- 1/2 cup of brown sugar
- 1/4 cup water
- 1 tablespoon pure vanilla extra
Put all 4 ingredients in food process and process until consistency is similar to light peanut butter. Place the almond paste in bowl to spoon into tart shell.
Strawberry Sauce
- 2 cups of fresh strawberry
- 3 tbsp of water
- 1/4 white granulated sugar
- 1 tbsp corn starch
Take a hand blender and pulverize fresh strawberry with 3 tbsp of water until completely smooth. Add the strawberry puree in sauce pan and heat up until mixture comes to light boil. Then add cornstarch diluted in water. Cut the heat once the sauce thickens and set aside to cool.
Assembly
Take a medium muffin tray, cut out of 4 inch round circles of chilled dough and place inside tin in the shape of a tart. Fill each tin with 1 tbsp of almond paste and top with 2 tbsp of the strawberry sauce. Place the filled muffin tray in refrigerator to chill for half hour until oven is pre-heated to 350 degrees Fahrenheit.
Place the chilled muffin tray into oven and bake for 30 minutes or until tarts are light browned around the edges and flaky. The tart filling should now have expanded and fully cover the base of the tart. Take tarts out of muffin tray and place in room temperature to cool down. Once cooled, serve tart topped with your favorite vanilla ice cream or whipped cream.
